Fruity yoghurt with granola.

I bought new cookbook:


... and because I will probably start uni this year, I thought thats good idea to know what kind of things I can make in shorter time, but with good taste. And because Im still on diet some of recipes seems very healthy for me.

Ingredients (serves 1):

- 200 g/7 oz rolled oats
- 2 tbsp clear honey
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp chopped walnuts
- 1 small ripe pear, peeled, 
cored and chopped
- 1/2 ripe mango, peeled, stoned
and chopped
- 125 g/5 oz natural yoghurt


How to make?:

1. Preheat the oven to 180℃/350℉/Gas Mark 4.

2. For the granola, mix the oats and honey together in a bowl and spread put on a baking sheet. Bake in the preheated oven for 10-15 minutes, stirring a couple of times, until the oats are lightly browned, then remove from the oven and leave to cool.

3. Place the seeds in a mortar and briefly grind with a pestle to break them into smaller pieces. Mix with the cooled oats and the walnuts.

4. To assemble, put half the pear and mango in glass and top with half yoghurt and a spoonful of granola. Repeat with the remaining fruit and yoghurt and top with more granola.

Cod with steam vegetables.

Today without introduction:)
Im tired, and dont want to much writing.

Ingredients:

- 4 cod fillets
- 3 carrots
- green bean
- sweetcorn
- cauliflower
- green peas
- bread crumbs
- vegetable oil or olive
- salt
- pepper
- 1 egg


How to make?:

1. Soak fillets in egg, then coat in bread crumbs and place in hot oil. Fry on both sides until golden brown.
2. Vegetables cut into slices, add to pot. Pour about half a cup of cold water and steam over low heat. At the end of cooking, add the peas and corn (if canned). Add salt at the end and stir.

Vegetables boiled on steam- very healthy and tasty.

Very healthy- that's the first thing which came to my mind, when I decided to make tht kind of food yesterday on supper, for me and my mom. It's now something new that I eat more healthy these times, so she decided to taste it, and she love it. It's not complicated dish, just potatoes and carrots, with a little bit of green beans and sweetcorn. I'm sure will be good proposition for vegetarian, for those who couting calories or just for those who want little change between meat dishes, and they want eat more healthy.

Ingredients (serves 2):

- 2 medium potatoes or 4 small
- 3 large carrots or 4 medium
- can of green bean
- can of sweetcorn


How to make?:

1. Potatoes and carrots wash under water, then peel them.
2. After peeled vegetables, slice them on medium small pieces (bars or wheels).
3. Take medium pot, pour half a cup of cold water, and start boiled on small fire.
4. Add sliced potatoes and carrots. Cover the pot on bout 10min, from time to time, check if vegetables are soft. If they are, add also green bean and sweetcorn. Stir a little bit. You can sprinkle salt or some spices to taste. And it's all done, u can serving now.

* I made one version just vegetables for my mom, and with garlic- herb dip for me;) It's up to u what kind of version u will make for yourself.

Chicken and noodle stir-fry.

A colourful Chinese favourite, packed with contrasting flavours and textures.

Ingredients:
  • 1 tbsp vegetable oil
  • 2 skinless bonless chicken breasts, cut into bite-sized pieces
  • 1/2 red pepper, deseeded and chopped
  • 1/2 yellow pepper, deseeded and chopped
  • 1/2 green pepper, deseeded and chopped
  • 2,5cm (1in) piece of fresh root ginger, peeled and grated
  • 115g mushrooms, quartered
  • 120ml (4fl oz) chicken stock
  • 2 tbsp tomato ketchup
  • 1 tbsp light soy sauce
  • 1 tsp cornflour
  • 350g (12oz) fresh medium egg noodles
  • toasted sesame oil, for drizzling
  • 2 tbsp sesame seeds, for garnish

How to make?:

  1. Heat the vegetable oil in wok or pan until hot. Add the chicken and stir-fry for 3 minutes. Remove and set aside.
  2. Add the peppers, ginger and mushrooms to the wok/pan and stir-fry for 3 minutes.
  3. Mix together the chicken stock, ketchup, soy sauce and cornflour until smooth. Return the chicken to the wok/pan, add the noodles and pour in the stock mixture. Toss everything together over the heat for 3 minutes, or until pipping hot.
  4. Just before serving, drizzle with sesame oil, sprinkle the sasame seeds on top and serve.

Besides, Im on diet... since 2 months- I lost 6kg, and Im proud of myself... but still want loose a little more :) figers crossed
